Classic Vanilla Custard Pudding

Ingredients

  • 2 cups whole milk
  • 4 egg yolk large
  • cup sugar
  • tsp salt
  • 1 tsp pure vanilla extract

Instructions
 

  • Preheat your oven to 325°F (160°C).
  • In a medium saucepan, heat the milk over medium heat until hot but not boiling.

  • In a separate bowl, whisk together the egg yolks, sugar, and salt until well blended.
    4 egg yolk, 1/3 cup sugar, 1/8 tsp salt
  • Slowly whisk the hot milk into the egg mixture, then add the vanilla extract.
    2 cups whole milk, 1 tsp pure vanilla extract
  • Strain the mixture through a fine mesh strainer into a large measuring cup or a bowl with a spout for easy pouring.
  • Divide the mixture equally among four ramekins.
  • Place the ramekins in a baking pan and fill the pan with enough hot water to come halfway up the sides of the ramekins.
  • Bake for 20 minutes, or until the custards are set around the edges but still slightly wobbly in the center when gently shaken.
  • Remove from the oven and let cool. Once cool, cover and refrigerate for at least 2 hours before serving.

Notes

The custards can be made and refrigerated up to two days ahead of time. They are best served chilled.
