Instructions
In a large mixing bowl, whisk together the flour and the eggs.
1 cup all-purpose flour,
2 eggs
Gradually add in the milk and water, stirring to combine.
1/2 cup milk,
1/2 cup water
Add the salt and butter, and beat until smooth.
1/4 teaspoon salt
Heat a lightly oiled non-stick frying pan over medium-high heat.
Oil or butter for frying
Pour about 1/4 cup of the batter into the pan, tilting the pan in a circular motion so that the batter coats the surface evenly.
2 tablespoons butter
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
Repeat the process with the remaining batter.
Serve hot with your favorite sweet or savory fillings.
Notes
You can add a bit of sugar to the batter if you're making sweet crepes.
