Ingredients

  • 2 cups popcorn kernels, popped
  • 1 cup oats gluten-free, rolled
  • ½ cup coconut shredded
  • ½ cup almonds chopped
  • ¼ cup maple syrup pure
  • 2 tablespoons coconut oil melted
  • 2 tablespoons brown sugar
  • 2 tablespoons peanut butter
  • 1 teaspoon cinnamon ground
  • ½ cup raisins or your choice of dried fruit

Instructions
 

  • Preheat your oven to 325°F (163°C). Meanwhile, line your baking sheet with parchment paper.
  • In your large mixing bowl, combine the popped popcorn kernels, gluten-free rolled oats, shredded coconut, and chopped almonds. Mix these ingredients until well combined.

  • In a separate small mixing bowl, add the melted coconut oil, brown sugar, pure maple syrup, peanut butter, and ground cinnamon. Stir these ingredients together until you get a smooth mixture.

  • Gradually pour this wet mixture into the large bowl containing popcorn, oats, coconut, and almonds. Stir thoroughly to ensure all dry ingredients are well coated with the wet mixture.
  • Transfer the mixture onto your prepared baking sheet, spreading it out evenly.
  • Bake in your preheated oven for 15-20 minutes, or until the mixture turns golden brown. Remember to stir the granola halfway through the baking time to ensure an even bake.
  • Once done, remove the granola from the oven and let it cool slightly. Stir in the raisins or your preferred dried fruit at this stage.

  • Allow the granola to cool completely on the baking sheet before transferring it into an airtight container for storage.
